Just a few weeks ago, we brought you the news that famed Tampa chef Jeannie Pierola would be opening a new, inventive restaurant deemed Edison: Food+Drink Lab between Hyde Park and Downtown Tampa.  Now, its doors are officially open for lunch and dinner giving Tampa diners a chance to see and taste what this new Tampa dining destination is all about.

Owner and head chef Jeannie Pierola is no stranger to playful, inventive dining concepts.  As the driving force behind KitchenBar, a series of temporary pop-up restaurants that have appeared throughout Tampa over the past few years, Pierola approaches cooking with a wholly unique mindset that's made her one of the most widely-revered Bay area chefs over the past few years.

This, of course, lends itself to a wholly unique menu at Edison.  The common theme, if there is one at all, is modern interpretations of various comfort foods throughout the ages.  Appetizers like sweet jalapeno cracker jacks and potato crusted oysters with dill pickle nectar and house dijonnaise are easy examples of the aformentioned.

Entrees are where Edison: Food+Drink Lab really shines.  Lunch and dinner highlights include sous vide, buttermilk fried organic chicken with butternut squash waffle batter, corn butter, chanterelle squash fricassee, truffle honey; grilled kobe culotte steak with patatas bravas, cabrales cherry tomatoes, and black truffle aioli; and a wood-grilled daily ground burger with hand-cut fries.
