Opened in October of 2012, Red Fork Cafe is one of the newest additions to the growing culinary landscape in Brandon.

This modest cafe, located at 715 W. Lumsden Ave., specializes in a variety of traditional Caribbean meals for lunch and dinner courtesy of owner/chef Esther Etienne and her traditional family recipes that span generations and cultures throughout the Caribbean.

"One of the things I do is that I work with a sweet and mild curry, which is never used in Haiti.  My food is a mixture of the Bahamas, Martinique and Haiti," Etienne told the Tampa Tribune last week.

Red Fork Cafe's menu boasts an eclectic mix of traditional Caribbean dishes loaded with unique spices and flavors you'll be hard pressed to find at many other places throughout town.

Appetizer selections include coconut shrimp with a fresh mango sauce, Bahamian conch fritters, marinated ground beef with lettuce wraps, and island style chicken fritters.

Red Fork's main selections are divided evenly between poultry, seafood, and red meat sections, each with their own signature dishes.  Menu highlights when it comes to entrees include Red Fork's signature jerk chicken seasoned to the bone and served with fried green plantains; fried snapper seasoned in fresh spices and balsamic vinegar; and succulent oxtails stewed with fresh spices and roma tomatoes with rice and beans.
