It's not often that a relatively high profile chef in the area opens a brand new restaurant featuring one of the most intriguing themes you've seen in a while.  But, Jeannie Pierola has done just that with her newest addition to the Tampa Bay restaurant landscape called Edison: Food + Drink Lab.

The former Bern's executive chef has decided to take up shop in the Kennedy Boulevard space that once housed the short-lived Knife & Co. in this Hyde Park area.

Pierola seems to be planning what could easily become one of the most unique restaurants in the Bay area. The decor is a play on the industrial theme, much of it inspired by the restaurants namesake, Thomas Edison.

According to a press release, "daily flavor experiments and modern interpretations of everyday food,” is the name of the game so far at Edison.  With a mind like Pierola's, this could mean some truly one of a kind, delicious meals.

This Tampa chef was the creator of Kitchenbar - a month-long event where Pierola and her team would take over an abandoned space and turn it into a temporary restaurant - so you know her style is anything but bland or typical.

Pierola aims to create modern interpretations of classic comfort foods and offer a decent assortment of big name beers, microbrews, and wines alongside it all.
