The concept of Cask was born out of a year that Tampa native TJ Miller spent in Washington, D.C. After working more than 10 years in the restaurant industry, including a start as a bus boy at the original Outback Steakhouse, TJ found himself in the corporate grind. He might not have been thrilled with his corporate gig in D.C., but he loved the nightlife and the lounge-like atmosphere at many of the local restaurants. He knew instantly that Tampa was missing something on the restaurant scene. In late 2013, TJ returned to Tampa, bringing with him the plans and conceptual design for a restaurant that would specialize in both Southern cuisine and hospitality. TJ had the vision, right down to uniform designs and menu items, so all he needed was investors. Fate intervened, and TJ met professional football player Vincent Jackson. Vincent was on board with the concept almost immediately and the two began looking for a venue. Realizing they needed assistance from someone with experience opening a new restaurant concept, they brought in TJ's long-time friend, Adam Itzkowitz. After finding the perfect venue in SoHo, completing architectural and design plans, and building a team around them to help bring their vision to life, the rest, as they say, is history…
